The look: Reminiscent of legendary speak-easy’s this is a warm three-room beach-side haven for rum lovers. Art deco blends with sixties retro while the dark wood base, brick walls and book-lined shelves create a must-include for your Blackberry.
The soundtrack: Chill week-days with an eclectic mix of Indie, Reggae and soul while weekends are an upbeat mix of old school tracks. Signature drink: Trace the heritage of rum cocktails by trialing forty cocktails originating from early 1500’s. Try An Old Cuban ($17.50), a mix of Bacardi 8, lime juice and mint topped with a fresh vanilla bean rim.
Bar snacks: The fusion tapas menu includes traditional choices like free range rump of lamb with lentil mash and rustic bread ($24.50, for two). Chocoholics order the assiette of rum & chocolate ($9.50).
Best for: Bondi locals, visiting style gurus and gatherings of interesting friends.
Wow factor: Watch for the tall blonde waiter who spontaneously transforms into an expert live pianist. If this bar were an animal it would be: A rum-punch parrot worthy of any modern pirate me hearties.
